Kodiak , Alaska 99615United StatesBioI provide expertise regarding seafood quality and safety to the Alaska seafood industry based on my thirty years of being a practicing food microbiologist. Additionally, as a Processing Authority and Certified Food Scientist, I assist the growing number of food and seafood entrepreneurs seeking to understand how to meet regulatory guidelines for producing safe products for consumers. I interact with K-12 schools to provide seafood science education and participate as a judge at student science fairs. Annually, I teach an introductory undergraduate course in fisheries utilization. My research has broadened to encompass evaluating rapid methods for quantifying paralytic shellfish toxin in clams and mussels harvested for subsistence by local residents. My latest research venture is experimenting with freezing and heating parameters to inactivate nematode parasites in salmon and cod.
